Cut a slit, lengthwise in each chicken breast to create a deep pocket. Be careful not to cut all the way through. Create as big a pocket as you can.
In a bowl, add avocado, cheese, sour cream, garlic powder and pepper. Stir to fully combine. You will need to mash the avocado as part of this process.
Spoon the avocado mixture into the pocket of each chicken breast. Use toothpick to help seal the pockets shut. Use the toothpicks after you have wrapped each chicken fillet with bacon
Wrap each chicken breast with 3 slices of bacon.
Place each chicken breast on the baking tray and place in oven to cook for about 30 minutes.
Remove from oven and place under a grill for about 5 minutes or until bacon is browned and crispy. Cooking time will vary depending on your grill. Keep watch during this process to avoid overcooking the bacon.
Remove from grill, garnish with additional avocado and serve.
