Baked Pesto Chicken

With 3 main ingredients and a little seasoning, this recipe could not be any easier.  But don’t let the small number of ingredients distract from the fantastic result that is created.

The chicken is cut into strips and then coated in basil pesto.  The chicken is then baked in the oven and finished off with mozzarella cheese.  The amazing mixture of the cheese and pesto with the juicy chicken produce a wonderful meal that will quickly become a family favourite.  So simple yet so tasty.

This is a truly spectacular chicken dish that you will look to cook again and again.  This dish clearly demonstrates that great tasty dishes don’t always need many ingredients and many involved steps.

  1. Preheat oven to 180°C (fan forced).
  2. Cut each chicken fillet lengthwise into 3 strips each.
  3. Season each chicken piece with salt and pepper.
  4. In a large baking dish, spread 1/3 cup basil pesto over the bottom of the baking dish.
  5. In a single layer, spread the chicken strips on top of the pesto in the baking dish.
  6. Spread the remaining 1/3 cup basil pesto over the chicken strips.
  7. Cover the baking dish with foil and bake for 25 minutes. Don't overcook as the chicken will continue to be cooked through the next steps.
  8. Remove dish from oven, remove foil and sprinkle 1/2 cup mozzarella cheese over the chicken strips. Return to oven and bake, uncovered for a further 5 minutes.
  9. Switch oven to grill mode or else preheat separate grill.
  10. Place baking dish under grill for 3 - 4 minutes to lightly brown the cheese.
  11. Remove from grill and serve.
