Baked Tortellini With Tomato, Spinach & Sausage

Pasta bakes are a favourite in our house and this is a terrific version mixing tortellini and Italian pork sausage with the casing removed to simply use the mince.  This is a very tasty combination.

The tortellini, Italian pork sausage and herbs blend together beautifully while baked in the tomato base.  With baby spinach, mozzarella and parmesan cheese mixed through and you have a wonderful creamy dinner packed with flavour.

Pasta bakes are usually fairly easy to cook and the steps involved are not very complicated.  This dish is no exception to that rule.  There is a little cooking up front, but after that it really is a case of simply add the ingredients together, stir to blend through and bake.

The end result is a great weeknight meal.

  1. Preheat oven to 210°C (fan forced).
  2. Heat oil In a large oven proof frying pan on medium to high heat.
  3. Add onion and cook for 2-3 minutes.
  4. Add garlic and cook for about 30 seconds.
  5. Add pork mince (without casings) and cook until browned (about 6-7 minutes). Stir constantly and break up clumps with wooden spoon.
  6. Remove from heat and add crushed tomatoes and stir through.
  7. Add basil, oregano, rosemary, mozzarella and spinach and stir through.
  8. Add tortellini and stir through. Try to get as much tortellini to the bottom of the pan as possible into the tomato mixture.
  9. Top with about half the parmesan cheese and sprinkle pepper, if required.
  10. Cook, uncovered, in the oven for about 18 minutes. After about 9 minutes, remove from oven and stir to mix through and replace back into the oven.
  11. With about 2 minutes to go, remove from oven and sprinkle with the remaining parmesan cheese and replace back into the oven to finish cooking.
  12. Remove from oven when ready and serve. Garnish with basil leaves, if required.
