Brown Sugar & Balsamic Pulled Pork

This is a really simple easy pulled pork recipe that uses only a few ingredients and is easy to prepare.  The taste is absolutely amazing for such a simple pulled pork recipe.  This will definitely become one of your favourite pork dishes.

The shredded pork is initially rubbed in a brown sugar, Dijon mustard and balsamic mix.  This provides a wonderful juicy, tender tasty base.  However, what really elevates this dish to another level is the amazing brown sugar, soy sauce & balsamic glaze that is simmered and thickened before being drizzled over the pork.

Pulled pork is definitely one of our family’s favourite dishes.  We really could have it for breakfast, lunch and dinner.  Our family is divided between which is our favourite pulled pork recipe.  Our two favourites are the Brown Sugar Balsamic Pulled Pork recipe listed here and this Texas Pulled Pork recipe.  It’s so hard to choose, both are really special.

We usually serve our pulled pork on bread rolls with this Red Cabbage Coleslaw recipe.

Many people prefer to cook their pulled pork with a slow cooker and that is OK as well.  I tend to find I get better results with my pressure cooker as well as it being a much quicker process.  However, cook the pork in whichever method suits you best.

This is a great meal for any day of the week.

Instructions
  1. Cut the pork into 5-6 smaller chunks to fit easier into your pressure cooker.
  2. Rub salt and pepper into each pork chunk.
  3. In a large bowl, add brown sugar, dijon mustard and balsamic vinegar. Stir to fully combine.
  4. Add pork to bowl and using your hands, coat each pork chunk with the brown sugar mixture.
  5. Place pork into pressure cooker along with garlic and 3/4 cup water.
  6. Cook on high setting for about 45 minutes.
  7. Once pork is cooked, remove from pressure cooker and shred.
  8. Drizzle brown sugar and balsamic sauce (see instructions below) over the pork and serve.
Brown Sugar Balsamic Sauce
  1. In a saucepan over medium heat, add brown sugar, corn flour, balsamic vinegar, water and soy sauce and stir to mix fully.
  2. Bring to boil then reduce heat and simmer for 10 - 15 minutes to allow the sauce to thicken. Stir regularly.
  3. Drizzle over shredded pork.
