Cajun Chicken & Chorizo Penne Alfredo

Pasta dishes are good options for week night meals as they are typically easy to make and very filling as well.  This recipe falls into those categories.

The chicken and chorizo mix extremely well together in a wonderful creamy sauce.  The Cajun spice adds just the right amount of mild spiciness to the dish.  Add in a good amount of garlic, mix through some parmesan and how can you go wrong?  This is a great week night meal that doesn’t require too much effort.

Leftovers taste just as good.  This dish also freezes well to put aside for those nights when you just can’t be bothered cooking or are simply too busy.

  1. Heat olive oil in a large saucepan or pot over high heat.
  2. Add chicken & chorizo and season with the salt and pepper while stirring through the oil.
  3. Cook until chicken is lightly browned. About 10 minutes.
  4. Add garlic, stir through chicken and cook for about 30 - 60 seconds.
  5. Add chicken stock, thickened cream, penne pasta and cajun seasoning.
  6. Stir to mix through and bring to boil.
  7. Reduce heat to low, cover saucepan/pot and simmer for about 20 minutes, or until pasta is tender.
  8. Remove from heat and stir through shredded cheese and parsley.
  9. Garnish with additional parsley, then serve & enjoy

    Not liking things hot, I went easy on the Cajun seasoning. Even though I had to make a GF version as well as a normal version at the same time, the recipe was easy to make and tasted really, really great. So good, left overs were gone by lunchtime the next day. Definitely a keeper.
