Instructions
  1. Cook gnocchi according to packet instructions. Drain & set aside.
  2. Heat olive oil in a large frying pan over medium high heat.
  3. Add chicken and cook until just browned.
  4. Add butter and melt.
  5. Reduce heat to medium and add garlic, & corn flour and stir to mix through and cook for about 30 – 60 seconds. Do not burn garlic.
  6. Add chicken stock, thyme, parsley & basil and stir to mix through. Cook for about 1 minute.
  7. Add gnocchi, thickened cream & parmesan and stir to mix through. Cook a further 1 – 2 minutes to heat gnocchi through and allow sauce to thicken a little.
  8. Remove from heat and top with avocado and garnish with fresh basil.
