Grilled Honey Lime Chicken

This one of the easiest to prepare and cook chicken meals you will find.  Everything can be done in around 20 minutes.  It could not be easier.

The chicken is marinated then basted in a simple marinade of lime juice, honey, garlic and soy sauce.  Grill the chicken until you have a small char finish and the end result is a juicy, moist tender and really tasty chicken meal.  The marinade provides a perfect blend that is not too citrusy or too sweet.  Just right!

As an added step, you could also heat the marinade in a saucepan while the chicken is under the grill, and spoon some additional marinade over the chicken once it is cooked and you are ready to serve.

  1. In a large bowl, add lime juice, honey, garlic & soy sauce. Mix to fully combine.
  2. Add chicken fillets to bowl, coat with the sauce, cover bowl with cling wrap and place in refrigerator for about 2 hours to marinate.
  3. Pre-heat grill to medium high heat.
  4. Place chicken fillets on a baking tray, lined with baking paper, and baste with the marinade.
  5. Place under grill and cook for 7-8 minutes.
  6. Remove from grill, turn chicken fillets over and again baste with marinade.
  7. Place under grill and cook a further 7-8 minutes or until chicken is cooked through.
  8. Remove from grill, garnish with coriander and serve.
  9. Optionally: heat the marinade in a saucepan for about 5 minutes to thicken a little and spoon onto chicken when ready to serve.
