Honey Mustard BBQ Chicken Salad With Avocado & BLT

This is a fantastic chicken salad dish to serve when your friends are over for a BBQ.

This is a wonderful meal to have on those balmy summer evenings when you are happy to bring out the BBQ.  This dish combines a very simple to make salad with beautifully marinated slices of BBQ chicken.  The real star of this meal is the honey mustard marinade and dressing.  The combination of honey, mustard and a hint of garlic is simply brilliant.  Chicken salads never tasted so good.

Honey mustard marinades combine so well with chicken.  You will find all sorts of other reasons to use this marinade.  The salad itself without the chicken is also amazing with the marinade mixed through.

You don’t need to limit yourself to the warmer months for this dish.  You can cook the chicken inside on your frying pan as well during the colder months.  Once you have this dressing you will want to find any reason or time of year to want to have it again.

Instructions
  1. Make the marinade first by mixing the honey, mustard, olive oil, garlic and pinch of salt. Stir to fully combine.
  2. Pour half of the marinade into a bowl. Set the remaining half aside, in the refrigerator, for the dressing.
  3. Add chicken fillets to the bowl and cover with the marinade. Place in refrigerator for at least 30 minutes to marinate - longer would be better.
  4. Remove chicken from refrigerator and cook on the BBQ grill plate until golden and cooked through. This will take about 20 minutes, but depends on your BBQ. Baste the chicken with the marinade from the bowl. Baste each time you turn the chicken.
  5. Once chicken is cooked, set aside to rest for 5 minutes, on a plate covered in foil.
  6. While chicken is cooking, place bacon into a frying pan and cook until crispy. You could also cook the bacon on your BBQ hotplate if preferred.
  7. Prepare the salad by tossing together the cos lettuce leaves, cherry tomatoes, avocado, corn, onion and bacon bits.
  8. Slice chicken into strips and place over the top of the salad.
  9. Remove the set aside dressing from the refrigerator and add 2 tbsp of water to the dressing. Stir to combine well.
  10. Drizzle dressing over the chicken and salad or set aside for each person to drizzle once they have the salad and chicken on their plate.
