Lemongrass Chicken Lettuce Cups

I enjoy wok cooking as it is usually a one pan meal, and it is so easy to throw all the ingredients into the wok and cook them together. This is a wonderful Thai inspired recipe. When you want something easy to cook and a little different for dinner, I would encourage you to try these.

The vegetables mix together extremely well and when mixed with the chicken mince, it is a very tasty meal. The lemongrass is the star of this meal however. It blends beautifully with the sweet chili sauce and the soy sauce to create a slightly sweet marinade. Served in cos lettuce cups gives a great crunch to each bite.

The preparation time for this meal takes longer than the actual cooking, however it is well worth the effort. This is a light meal that your family will enjoy.

Recipe Notes

You could substitute ground beef or pork for the chicken in this recipe. If you also want to spice it up you can add a long red chilli or some ground chilli to heat it up to your preference. The cool lettuce against a spicy mixture is also a nice tasting contrast.
