Ingredients
Orange Glaze
Instructions
  1. In a medium bowl, add eggs, 3/4 cup thickened cream and orange zest. Mix until fully combined. Set aside.
  2. Preheat oven to 200°C (fan forced).
  3. In a large bowl, add flour, 2 tbsp sugar, baking powder and salt. Stir to combine.
  4. Cut butter into small cubes and add to bowl. Using your hands mix through the flour mixture until combined and the mixture resembles a coarse meal like texture.
  5. Make a well in the centre and add the egg & cream mixture.
  6. Using a fork stir until combined and a dough forms.
  7. Turn dough out onto a lightly floured surface and knead for a minute or two.
  8. Press dough into a rectangle shape about 1 1/2 cms thick.
  9. Cut dough into 9 equal sized rectangles and separate. Then cut each rectangle in half creating two triangle shapes.
  10. Place each triangle shape onto a baking tray lined with baking paper. Place each triangle about 2 cms apart to allow for expansion when cooking.
  11. Brush each scone with the remaining thickened cream (1/4 cup) and sprinkle each scone with remaining white sugar (2 tbsp).
  12. Place tray in oven and cook for about 15 – 16 minutes or until golden brown. Remove from oven and allow to cool on a wire rack
Orange Glaze
  1. In a medium bowl, add icing sugar, vanilla extract and initially 2 tbsp orange juice. Stir to combine. If mixture is too firm add additional orange juice. If mixture is too liquid, add additional icing sugar.
  2. Using a spoon drizzle orange glaze onto scones.
Recipe Notes

As an added enhancement, you could also consider drizzling dark or milk chocolate over the top of the scones.  Not only will this add to the sweetness, but orange and chocolate are an amazing flavour combination.
