Pork, Spinach & Ricotta Cannelloni

This is a classic cannelloni pasta meal.  It only uses a few ingredients and it is a very simple recipe.

The cannelloni tubes are made with fresh lasagne sheets.  The pork, spinach and ricotta filling are a great combination and wonderful filling for the cannelloni.  Topped with a pasta sauce and mozzarella cheese and you have a very tasty & hearty meal.

You can use store bought cannelloni pasta shells and fill those with the pork mince filling.  This can be fiddly and to be honest I’m not sure it is really any easier than using lasagne sheets which are easier to fill and simply roll up.  I think fresh lasagne sheets taste best, but either way this is a very nice pasta dish.

  1. Preheat oven to 180°C
  2. Combine pork, ricotta, spinach, eggs, thyme and pepper in a large bowl. Use a wooden spoon to mix
  3. Lay lasagna sheets on a flat surface and cut sheets into 2 or 3 sections depending on the size of your lasagna sheet.
  4. Spoon the pork mixture onto the centre of each sheet of lasagna, then roll the sheet to enclose the filling. Brush each edge with milk to seal the join.
  5. Place each roll, seal side down in a baking dish. Only place rolls in a single layer.
  6. Pour the tomato pasta sauce over the cannelloni and sprinkle the top with the shredded cheese.
  7. Bake in the oven for 25-30 minutes until the cheese is bubbling.
  8. Serve warm with your favourite vegetables or salad
Recipe Notes

You can use other forms of mince as well, to your preference.  Our local supermarket sells a combination of pork and veal mince which I will often use.
