Sticky Thai Orange Peanut Chicken

Chicken, rice and a nice thick sauce are a great combination that leave you waiting in high anticipation for the dish to cook.  An orange sauce is just a perfect match for a chicken dish.  This dish uses a lot of spices and ingredients however they work so well together to create an wonderful result.

The chicken thighs provide a juicy base that are initially rubbed in a spice mixture.  They are then baked in a beautiful sauce of orange, marmalade and peanut butter which blend together perfectly.  The sauce is mixed with brown sugar, fish sauce & tomato sauce which help offset the sweetness.  The sauce bursts with orange flavour however it is not overpowering and soaks into the rice that is served with this dish.  This is just an amazing chicken dish that will become a firm favourite.

If you would like to ‘spice’ it up a little then add some ground chilli into the sauce.  Otherwise it bursts with flavour as is – it’s really your choice.

Instructions
  1. Preheat a fan forced oven to 180°C (350°F).
  2. Heat a saucepan and add all of the Thai Orange Peanut sauce ingredients - marmalade, peanut butter, soy sauce, brown sugar, cornflour, ground chilli, tomato sauce, fish sauce, orange zest, orange juice, roasted peanuts.
  3. Stir and mix together and simmer for a few minutes until a thick stick sauce forms the set aside.
  4. In a separate bowl combine all Chicken Spice Mixture ingredients and mix together.
  5. Add chicken thighs and coat well.
  6. Transfer chicken thighs to an oven proof frying pan (or baking dish) and cook for about 5 minutes, just until outside of chicken turns white.
  7. Remove from heat & cover with thai orange peanut sauce, spread the sauce evenly over the thighs.
  8. Squeeze juice from quartered orange over the chicken thighs and add quarters into baking dish with the chicken.
  9. Bake for 15 minutes or until chicken is cooked.
  10. Slice chicken and place on a bed of rice.
  11. Spoon orange sauce over the chicken and garnish with spring onion and orange wedge.
