Thai Beef Omelette

This is a really simple to make variation to a standard omelette using some Thai inspired ingredients.

The omelette filling which includes beef, mushrooms, chilli, garlic, capsicum & tomatoes are all cooked first.  The omelette is then cooked, with the filling added at the end before the omelette is done.  Garnished with basil and you have an incredibly tasty meal that is a great option when you are looking for an easy weeknight meal.

  1. Heat vegetable oil in a large frying pan over medium high heat.
  2. Add mince and cook until browned.
  3. Add mushrooms and cook for about 5 minutes.
  4. Add garlic, chilli and green capsicum, stir to mix through and cook for about 2 minutes.
  5. Add fish sauce, stir to mix through.
  6. Season with salt and pepper, stir to mix through then remove from heat and keep warm.
Omelette
  1. For each omelette, whisk 2 eggs in a bowl.
  2. Pour egg into a medium frying pan on medium high heat and swirl to spread the egg.
  3. Flip omelette once and once omelette is almost cooked spoon 1/4 of the mince mixture onto the omelette. Note you will fold the omelette so add the mince to one half of the omelette.
  4. Fold omelette over the mince mixture and remove from pan and onto plate to serve. Garnish with Thai basil leaves.
  5. Repeat process for each omelette.
  6. Keep omelettes warm in oven until ready to serve.
