Wonton Taco Cups With Tomato Salsa & Avocado Sour Cream

Try these Wonton Taco Cups for a really tasty snack or appetiser.  They have a beautiful beef taco inspired filling surrounded by a crunchy outer shell.

The beef is flavoured beautifully from the taco seasoning.  Mix through a tomato salsa and melt in some cheese and you have a fantastic base to start.  Bake in some wonton wrappers that provide a wonderful crunchy bite to offset the cheesy beef centre.  Finally, top with an avocado sour cream mix and you have an amazing taco inspired appetiser cup.

These cups are the perfect two bite appetiser.  They are fairly easy to make and the hardest part is knowing when to stop eating them.  Once you start they are so tasty that you may need to make a second batch.

Instructions
  1. Pre-heat a fan forced oven to 180°C (350°F).
  2. In a frying pan on medium high heat, add beef mince and cook until no longer pink. About 6 minutes.
  3. Keep mince in the pan however drain any juice from the pan.
  4. Add taco seasoning and stir to mix fully through the beef.
  5. Add tomato salsa (refer instructions below) and stir to mix through
  6. Add 1 cup shredded cheese and stir through until melted. Remove from heat and set aside.
  7. Spray a mini muffin tray with non stick spray. I use a 24 hole mini muffin tray. Note: the cups will likely need to be completed in batches.
  8. Place wonton wrappers into the tray and create wells in each hole.
  9. Spoon the beef mixture into each wonton wrapper until they are filled, then sprinkle with the remaining shredded cheese.
  10. Place into oven and bake for about 7-8 minutes or until wonton wrapper is a golden brown and cheese is melted.
  11. Remove from oven and top with avocado cream (refer instructions below) and additional diced tomato and serve.
Tomato Salsa
  1. In a medium bowl, add tomato, onion, coriander, spring onion, garlic, salt and pepper. Stir to fully combine. Note: this can be made in advanced and stored in refrigerator until ready to use.
Avocado Cream
  1. In a medium bowl add avocado, sour cream, salt and pepper. Stir to full combine. Note: this can be made in advanced and stored in refrigerator until ready to use.
