For a really quick to make and very tasty pasta meal that can be done in less than 30 minutes, try this one. It’s a great meal packed with good fresh ingredients but still with a rich flavour.
This dish is a great alternative to the cream based pastas. However it still has a smooth rich texture due to the olive oil and parmesan. The flavour is provided by the wonderful blend of avocado, roma tomato, red onion, basil and lemon. Mixed with spiral or fusilli pasta to provide a meal that is great when served warm or cool as a pasta salad. It’s your choice!
For those that still prefer a cream based alternative, you can, of course, add cream in place of the olive oil. For me, however, I prefer the dish as is and to serve it warm. Leftovers can easily be heated in the microwave or served perhaps as a nice pasta salad for lunch.

Avocado & Bacon Pasta
Instructions
Cook pasta according to packet directions. Drain and set aside.
In a frying pan over medium high heat add bacon and cook until brown and crispy. Remove from pan and set aside.
In a large bowl, add tomatoes, red onion, basil leaves, parmesan, olive oil, lemon juice and lemon zest, Stir to fully combine. Season with salt and pepper.
Add pasta and bacon and stir to mix through.
Add avocado and stir to mix through.
Serve when ready and garnish with extra parmesan.
