Ingredients
- 6 Large Hash Browns defrosted
- 1/2 tin Baked Beans
- 3 Sausages chopped. I like Italian pork sausage, however use your favourite
- 4 rashers Bacon chopped
- 5 Eggs
- 50 ml Milk
- 100 g Shredded Cheese
- 1/2 tsp Ground Parsley
- Ground Pepper to season

Instructions
- Preheat oven to 200°C (fan forced).
- Grease a 12 cup muffin tray.
- Place 1/2 hash brown in each cup. Push each hash brown so that it covers the base.
- Bake for 20-25 minutes or until golden brown.
- Remove from oven and place 1 tablespoon of baked beans on top of each hash brown.
- Place a few pieces of bacon and sausage onto each cup.
- Whisk the eggs and milk together in a jug and pour some into each cup. Spread evenly among the cups.
- Top each cup with shredded cheese, parsley and pepper.
- Bake for a further 7-10 minutes until the eggs are cooked and the cheese is melted and browned.
- Remove from oven and serve.
