Cut each chicken fillet lengthwise into 3 strips each.
Season each chicken piece with salt and pepper.
In a large baking dish, spread 1/3 cup basil pesto over the bottom of the baking dish.
In a single layer, spread the chicken strips on top of the pesto in the baking dish.
Spread the remaining 1/3 cup basil pesto over the chicken strips.
Cover the baking dish with foil and bake for 25 minutes. Don’t overcook as the chicken will continue to be cooked through the next steps.
Remove dish from oven, remove foil and sprinkle 1/2 cup mozzarella cheese over the chicken strips. Return to oven and bake, uncovered for a further 5 minutes.
Switch oven to grill mode or else preheat separate grill.
Place baking dish under grill for 3 – 4 minutes to lightly brown the cheese.
