Ingredients

Instructions
Season Chicken with both salt and pepper.
Heat olive oil in a large frying pan over medium high heat.
Add olive oil and chicken to pan. Cook chicken for approx 6-7 minutes on each side until chicken is browned and cooked throughout.
Remove chicken from pan and set aside.
Add garlic and onion to pan and cook for about 1 minute until fragrant.
Add balsamic vinegar, mustard & honey. Stir with wooden spoon to mix completely.
Reduce heat to medium low and simmer for about 3-4 minutes. Stir regularly.
Add chicken to pan and place mozzarella slice on each chicken fillet.
Cover the pan and cook for a further 4 minutes or so until cheese is melted.
Remove pan from heat and sprinkle tomatoes and basil leaves over the chicken and serve.
