This is a relative easy recipe to produce an amazing 3 layer cake.
Banana cakes are a favourite of many people and this is a wonderfully moist cake offset by a mildly sweet cream with a subtle honey flavour that perfectly complements the banana. The caramel sauce on top simply adds another burst of sweetness into the mix.
The banana cake itself is really easy and quick to mix and get ready to bake. Most of the effort is in the layering of the cream and topping with the caramel sauce.
All that effort is really worthwhile when you can produce this superb cake. Given that bananas are a healthy food item, I think it is OK to have second slice!!

- 1 1/2 cups Self-Raising Flour
- 1 cup Brown Sugar
- 1 cup Mashed Banana about 3 medium bananas
- 150g Unsalted Butter melted
- 2 tbsp Honey
- 1 tsp Vanilla Essence
- 4 Eggs

- 1 cup Caster Sugar
- 1/3 cup water
- 1/3 cup Thickened Cream
- 1 tbsp Brown Sugar

- 1 cup Thickened Cream
- 250 g Sour Cream
- 1/2 cup Honey extra

Instructions
- Preheat oven to 160º C (fan forced)
- Place flour and sugar into a large bowl and stir to combine
- Make a well in the centre and add bananas, butter, honey, vanilla essence and eggs. Using a wooden spoon, stir well to combine.
- Pour mixture into a lightly greased 20cm round cake tin (springform) lined with non-stick baking paper.
- Place in oven and cook for 60 - 70 minutes, or until cooked when tested with a skewer.
- Allow to cool for 10 minutes before turning out onto wire rack to cool completely
Caramel sauce
- Place sugar and water in a medium saucepan over medium heat and stir until just combined.
- Bring to boil and simmer without stirring, until light caramel in colour (approx 9-10 minutes)
- Remove from heat and add cream and brown sugar, and stir through
- Return saucepan to heat and stir to combine, Set aside to cool.
Cream Filling
- Place cream, sour cream and extra honey into a bowl and combine using a hand-held electric mixer. Mix until stiff peaks form
Cake Assembly
- Cut the cake horizontally into 3 even layers.
- Spread 1/3 of the cream filling over the bottom layer of the cake.
- Top with another layer of the cake and repeat with remaining cream and layers
- Spread remaining cream on top of cake and drizzle with the caramel sauce
