Add flour & baking powder and stir to mix through.
In a separate bowl, add egg whites and using an electric mixer beat until fluffy and soft peaks form.
Fold egg whites into banana mixture.
Heat a non stick frying pan over low to medium heat.
Spoon a 1/4 cup size of banana mixture into the pan and cook until mixture starts to bubble. Flip pancake and cook other side until golden. Note: cook several pancakes together depending on the size of your pan.
Remove pancakes from pan and keep warm until ready to serve.
Serve pancakes as a stack of 2 or 3. Top with sliced banana and pistachio nuts and drizzle with honey & lemon syrup (per instructions below).

In a small jug, add honey & lemon juice.
Place in microwave for 30-60 seconds then stir to mix through
