Beef Mince

deseeded and thinly diced

Red Kidney Beans

Instructions
Pre-heat a fan forced oven to 200°C (390°F).
Add mince to a large baking dish. Spread over the dish and break up the clumps.
In a small bowl, add cajun seasoning, ground oregano & ground cumin. Stir to mix through.
Sprinkle over the beef mince.
Drizzle 1 tbsp Olive Oil over the mince.
Place in oven and bake for 5 minutes.
Remove from oven, stir to mix through.
Reduce fan forced oven to 180°C (350°F).
Sprinkle red onion and green capsicum over the top of the mince.
Drizzle 1 tbsp Olive Oil over the top.
Return to oven and bake for 10 minutes.
Remove from oven and stir to mix through.
In a small jug, mix boiling water and Tomato Paste and stir to mix through.
Sprinkle Red Kidney Beans over the mince.
Pour tomato paste over the mince then stir to mix through.
Return to oven and bake a further 5 minutes.
Remove from oven and sprinkle with cherry tomatoes and avocado.
Pour lime juice over the top.
Garnish with coriander, then serve with sour cream and warm tortillas.
