Ingredients

Olive Oil

Chicken Fillets
I use breast fillets, cut into bite size pieces

Salt

Pepper

Chorizo Sausages
sliced

Chicken Stock

cloves
Garlic
crushed

Thickened Cream

Penne Pasta

Cajun Seasoning

Parmesan cheese
shredded

cup
Fresh parsley
finely chopped
Instructions
Heat olive oil in a large saucepan or pot over high heat.
Add chicken & chorizo and season with the salt and pepper while stirring through the oil.
Cook until chicken is lightly browned. About 10 minutes.
Add garlic, stir through chicken and cook for about 30 – 60 seconds.
Add chicken stock, thickened cream, penne pasta and cajun seasoning.
Stir to mix through and bring to boil.
Reduce heat to low, cover saucepan/pot and simmer for about 20 minutes, or until pasta is tender.
Remove from heat and stir through shredded cheese and parsley.
Garnish with additional parsley, then serve & enjoy
