This is a really simple to make pasta dish which provides a great tasty meal to satisfy the family.
The chicken is well seasoned with cajun spice and combined with a lovely parmesan and cream sauce. Garlic and lemon also provide some subtle hints of flavour as well. Penne pasta is cooked then mixed through to provide a hearty meal. Finally topped with Roma tomato and parsley to further enhance the wonderful flavour mix. This dish won’t disappoint.
I use penne pasta for this dish, however you can, of course, substitute other pastas to your preference. Equally, additional cajun spice can be used to intensify the lovely cajun flavours. We will often do this for our version.

Ingredients
- 3 Chicken Fillets use breast fillets cut into bite sized pieces
- 2 tbsp Olive Oil
- 1 tbsp Cajun Seasoning more to preference
- 350 g Penne Pasta
- 2 tbsp Butter
- 3 cloves Garlic crushed
- 1 cup Thickened Cream
- 1 tsp Lemon Zest
- 1/4 cup Parmesan cheese grated
- 2 Roma Tomatoes diced
- Fresh parsley diced to garnish

Instructions
- Cook pasta according to packet instructions. Drain and set aside.
- In a large bowl add chicken, 1 tbsp olive oil & cajun seasoning. Mix to coat the chicken with the cajun seasoning.
- Heat 1 tbsp olive oil in a large frying pan over medium high heat.
- Add chicken and cook until browned and cooked through. Remove from pan, set aside and keep warm.
- Add butter to pan and melt over medium high heat.
- Add garlic and cook while stirring regularly for about 1 minute.
- Add lemon zest & thickened cream to pan and continue to stir to mix through. Add the cream via a slow pour into the pan to gradually add it while stirring. Continue stirring for about 1-2 minutes.
- Add parmesan and stir to mix through. Continue stirring for about 1 minute to allow the sauce to thicken a little.
- Add penne and chicken to pan and stir to mix through. Continue stirring for about 1-2 minutes to heat the chicken.
- Remove from heat, top with roma tomato and garnish with parsley, then serve with additional parmesan.
