Cajun Pork, Broccoli & Cheese Penne

Pork and Cajun seasoning mix so well together.  The wonderful pork flavour is simply enhanced by the seasoning.  Add in vegetables and penne you have a fantastic pasta meal that the whole family can enjoy.

The pork is seasoned with Cajun spices to provide a mild seasoning.  The broccoli add a nice crunch while the cherry tomato provides a nice sweet juicy addition.  Cooked together with the penne and finished with cheese and cream and you have a wonderful creamy Cajun pork pasta meal.  An easy to make weeknight dinner that won’t disappoint.

This recipe only uses 1 tbsp of Cajun seasoning, so this is a very mildly spiced dish.  Add additional Cajun seasoning or chilli powder to your preference if you want to spice it up further.

This is all cooked in one frying pan so minimal clean-up is required afterwards and that’s got to be a benefit.

  1. In a medium bowl add pork, cajun seasoning and salt. Toss the pork to coat with the seasoning. You may find it easiest to use your hands to toss the pork.
  2. Heat olive oil in a large frying pan over medium to high heat.
  3. Add pork and cook until browned (about 5 minutes). Remove from pan and set aside.
  4. Add onion and garlic to pan and cook for about 3 minutes until onion softens.
  5. Add chicken stock, 1/2 cup thickened cream and penne pasta and stir to combine.
  6. Bring to boil, then cover with lid and reduce heat to simmer. Allow to simmer for about 15 minutes to ensure the penne is cooked. Check regularly to ensure the pasta remains moist. Add additional stock if you think the pasta is becoming too dry. Equally if it is too liquid then remove cover for a few minutes to hasten the reduction and evaporation of the stock.
  7. Once the pasta is cooked, add return pork to the pan along with cheese and 1/4 cup of cream and mix to fully combine.
  8. Add broccoli & cherry tomatoes and cook a further minute to heat through.
  9. Remove from heat and serve. Sprinkle with additional cheese and black pepper as required

    Well THAT was delicious! I didn’t add salt because there was enough in the cajun seasoning I used. Also subbed a red and half an orange bell pepper for the tomatoes because I didn’t have any. No other changes. We loved it!
