Chicken & gnocchi are one of my favourite food combinations. They mix so well together. This is a very easy to make pasta meal that uses very few ingredients but will definitely surprise your taste buds.
The chicken is initially cooked and browned before mixing with gnocchi. Add in some crispy bacon and you have a wonderful addition. This dish is really elevated once you mix through the creamy basil pesto sauce. Finally top with some roasted pine nuts to add a nice crunch to each mouthful. This dish has few ingredients, is simple to make, yet is really bursting with pesto flavour.
This pasta dish is definitely a firm favourite and on high rotation on our home dinner menu. It can be prepared and cooked in less than 30 minutes. It just couldn’t be easier.

Chicken Pesto With Gnocchi, Bacon & Pine Nuts
Instructions
Heat oil in large frying pan
Cook chicken, in batches if required, until cooked through and golden brown. Transfer to plate and set aside
Add bacon and cook for about 5 minutes, until golden and crisp. Remove from pan and transfer to plate
Add pine nuts to pan and cook over medium heat for about 1 minute. Keep stirring until golden and remove from pan
Cook gnocchi in large saucepan per instruction on the packet. Once done, drain water from saucepan and return gnocchi to the saucepan.
Add, chicken, bacon, pesto, cream fraiche and half the pine nuts to the saucepan and mix together with wooden spoon.
Divide among serving bowl and sprinkle top with pine nuts
