Ingredients

Chicken Fillets
use breast fillets, cut into chunks for skewers
120g
Baby Spinach
1
Avocado
diced
2
Roma Tomatoes
diced
1/2
Red Onion
thinly sliced
1/2
Red Capsicum
diced
Instructions
In a large bowl, place spinach in first as the base.
Add tomatoes, avocado, onion and capsicum and toss to combine.
Spread salad across 4 serving plates.
Place wooden skewers in water at least 2 hours before you plan to cook the chicken. Note: if metal skewers are to be used you can skip this step.
Place chicken chunks onto skewers to create the number of chicken skewers required.
Cook chicken skewers in pan or on BBQ.
Once chicken is cooked, placed skewers onto salad of each plate.
Top with satay sauce and serve. The satay sauce can be made from the recipe per the link below.
