Ingredients

Chicken Fillets
Breast fillets, cut into bite size pieces

Garlic
crushed

Baby Spinach

Sun-Dried Tomatoes
use jarred tomatoes packed in oil (approx 280g Jar)

Thickened Cream

Parmesan cheese

Instructions
Cook tortellini according to packet instructions.
Heat oil in a frying pan over medium heat.
Add chicken and cook until browned and cooked through (about 10-15 minutes). Transfer to a plate and set aside. Keep warm by covering with foil.
Add spinach, garlic and sun-dried tomatoes to the frying pan and cook for about 2 minutes or until spinach is wilting. Stir constantly.
Add thickened cream and cook, while stirring regularly, for about 1 minutes until liquid is reduced a little and becomes creamy.
Add chicken, tortellini & parmesan to the pan, stir to coat with the cream sauce and cook for about 1 minute until heated through. and cheese melts.
Top with black pepper and serve.
