Ingredients

Chicken Fillets
breast fillets

Spring Onions

Sun-Dried Tomatoes
roughly chopped

Instructions
Heat 1 tbsp olive oil in a large frying pan on medium high heat.
Add chicken breast fillets and cook until browned and cooked through. Remove from pan, keep warm and set aside.
Add remaining olive oil to pan and add spring onion and cook until softened, about 2-3 minutes.
Add garlic and cook for a further 30 seconds. Be careful not to burn the garlic.
Add chicken stock and stir to mix through
In a separate small bowl add 1 tbsp water to the corn flour and stir to mix fully, then add to the frying pan.
Add sun-dried tomatoes, season with salt and pepper, then stir to mix through.
Bring to boil then set to simmer and allow to simmer for about 1 minute, while constantly stirring.
Add cream and parmesan and stir constantly to mix through until cheese has melted.
Remove from heat, add chicken fillets back to pan and spoon sauce over chicken fillets.
Garnish with basil and serve.
