This is a simple yet wonderful chocolate version of the friand. This produces a dense, moist chocolate flavoured cake that provides a great sweet snack between meals or with a morning or afternoon tea.
When you are short on time, but want to create a nice sweet treat, this is an easy answer for you. They can also be made in advance of your social gathering and store well for a few days.

- 150 g Almond Meal
- 1 2/3 cups Icing Sugar
- 1/2 cup Plain Flour
- 1/4 cup cocoa powder
- 1/2 tsp Baking Powder
- 5 Egg Whites
- 200 g Butter melted

Instructions
- Preheat oven to 160°C (fan forced).
- Place almond meal, icing sugar, flour, cocoa and baking powder in a large bowl and stir to combine. Use a wooden spoon.
- Add egg whites and stir to combine.
- Add butter and stir to combine.
- Grease 12 cup friand baking pan.
- Spoon mixture evenly into the baking pan.
- Bake in over for about 15-20 minutes or until cooked through.
- Dust with icing sugar and serve.
Do you need to beat the egg whites before adding?
Hi Kate, there is no need to beat the egg whites first, but if you feel the need just a gentle beating only.
