Chocolate Souffle

Instructions
Pre-heat a fan forced oven to 180°C (350°F).
Grease four ramekin dishes (approx 1 cup in size) and sprinkle inside of dish evenly with caster sugar. Shake off excess.
Melt butter in a small saucepan over medium-high heat.
Add flour and stir to combine with butter until mixture thickens.
Remove from heat and add chocolate & egg yolks and stir to fully combine. Transfer to a large bowl.
Add egg white to a separate bowl and using an electric mixer, beat until soft peaks form.
Slowly add caster sugar while continuing to beat the egg whites. Beat until fully combined.
Add the egg white mixture (in two batches) to the chocolate mixture in the large bowl and fold through until just combined.
Spoon mixture evenly into the ramekin dishes and bake in oven for about 15 minutes or until souffles are puffed up, cooked through and browned on top.
Remove from oven, sprinkle top with icing sugar and serve. Note: we like to serve our souffles with whipped cream or ice cream (or both).
