The combination of chicken and lemon is always a winner and provides a very tasty base on which to create a meal.
The chicken, garlic and lemon provide a fantastic blend to create a beautiful flavour. Mix through some baby spinach as it wilts perfectly into the meal. Add penne pasta and mix in a creamy sauce of cream cheese, parmesan and mozzarella and you finish with a wonderful creamy, full flavoured pasta meal that will satisfy the whole family.
The great thing about this meal, is that it can be prepared and cooked in about 30 minutes or so. Leftovers will store in the refrigerator for a few days or freeze if you prefer, to bring out and microwave on days when you don’t have time to prepare and cook a meal.

Ingredients
- 1 tbsp Olive Oil
- 750 g Chicken Fillets about 3 breast fillets cut into bite size pieces
- 1 Brown Onion diced
- 1 clove Garlic crushed
- 150 g Baby Spinach
- Lemon Zest zest from 2 lemons
- 1/2 cup Parmesan cheese grated
- 1/2 cup Shredded Mozzarella Cheese
- 125 g Cream Cheese
- 375 g Penne Pasta use small penne pasta

Instructions
- Cook penne per directions on packet.
- Heat olive oil in a large frying pan on high heat.
- Add chicken and onion and cook until onion is tender and chicken is browned and cooked through About 8-10 minutes.
- Add garlic and cook a further 30 seconds.
- Reduce heat to medium low and add spinach and lemon zest. Cover the pan and cook until spinach wilts (about 2-3 minutes).
- Reduce heat to low and add thickened cream, cream cheese, parmesan cheese & mozarella cheese. Stir to combine until all of the cheese is melted. The cream cheese will take the longest.
- Add cooked penne pasta and stir to mix through the creamy sauce. Serve immediately.
