In a large frying pan over medium to high heat, add chorizo and cook until browned. About 5 minutes. Use wooden spoon to break apart the sausage, if required.
Add onions and salt and cook for a further 5 minutes until the onion softens.
Add sun-dried tomatoes and cook a further 1 minute.
Add baby spinach and cook until spinach leaves have wilted.
Drain gnocchi and add to pan. Stir to combine and mix through.
