Ingredients

Chicken Fillets
thigh fillets
1/3
cup
Lime Juice
1/3
cup
Honey
4
cloves
Garlic
crushed

Soy Sauce
Coriander
to garnish
Instructions
In a large bowl, add lime juice, honey, garlic & soy sauce. Mix to fully combine.
Add chicken fillets to bowl, coat with the sauce, cover bowl with cling wrap and place in refrigerator for about 2 hours to marinate.
Pre-heat grill to medium high heat.
Place chicken fillets on a baking tray, lined with baking paper, and baste with the marinade.
Place under grill and cook for 7-8 minutes.
Remove from grill, turn chicken fillets over and again baste with marinade.
Place under grill and cook a further 7-8 minutes or until chicken is cooked through.
Remove from grill, garnish with coriander and serve.
Optionally: heat the marinade in a saucepan for about 5 minutes to thicken a little and spoon onto chicken when ready to serve.
