Place each chicken breast on a cutting board and make sliced cuts across each fillet. Make each cut about 3/4 through the fillet, do not cut all the way through. Maker about 6 – 8 cuts depending on size of the fillet.
Within each cut on the chicken fillet, place a slice of mozarella, a basil leaf and cherry tomatoes
Place the chicken fillets in a baking dish, and brush with olive oil and sprinkle with ground basil and pepper.
Place baking dish in oven and cook for approx 25 minutes.
Remove from oven and serve with salad or vegetables.
