  1. Marinate the chicken fillets before cooking. Marinate for at least 30 minutes.
  2. Add soy sauce, tomato sauce, honey and garlic to a large bowl and stir to mix completely.
  3. Add thigh fillets and mix through to cover completely with the marinade. Cover bowl with cling wrap and place in refrigerator for at least 30 minutes to marinate.
  4. Preheat oven to 180°C (fan forced).
  5. Line a baking tray with baking paper and place chicken fillets onto the tray. Keep marinade in the bowl. Using a brush, baste the chicken fillets with the marinade, then place in the oven to cook for 30 minutes, or until chicken is cooked through.
  6. While the chicken is cooking, add the marinade to a saucepan and bring to a boil. Reduce heat and simmer for 20 minutes to allow marinade to thicken.
  7. Once chicken is cooked, remove from oven and brush chicken with the marinade or spoon marinade onto chicken before serving. Serve with vegetables or salad.
