In a large bowl, add honey, white wine vinegar, garlic, dijon mustard, olive oil and thyme leaves. Stir to fully combine.
Add chicken drumsticks and toss to coat with honey mustard sauce. Cover with plastic wrap and place in refrigerator for at least one hour to marinate.
Pre-heat a fan forced oven to 200°C (390°F).
Line a large baking tray with baking paper.
Remove chicken drumsticks from refrigerator and place on baking tray.
Brush chicken with honey mustard marinade, place in oven and bake for about 30 minutes until chicken is cooked through. Note: after 15 minutes, rotate chicken on baking tray, brush with marinade and return to oven.
About 10 minutes before the chicken is done, place remaining marinade into a small saucepan and simmer to allow the sauce to thicken a little.
Once chicken is cooked, remove from oven, serve and top with marinade.
