Ingredients

Risoni

Chicken Fillets
thigh fillets cut into bite size pieces

Red Capsicum
diced

Brown Onion

Garlic

Honey

Wholegrain Mustard

Instructions
Cook Risoni per packet instructions. Drain & set aside.
While Risoni is cooking, heat 1 tbsp olive oil in a large frying pan over medium-high heat.
Add chicken and cook until browned and cooked through. Remove from pan and set aside.
Add remaining olive oil to pan, then add capsicum, onion & garlic. Cook for about 5 minutes until tender.
Add honey, wholegrain mustard then cream. Stir to mix through, then reduce heat. Simmer for about 4 minutes until sauce thickens slightly.
Return chicken to pan, stir to mix through and continue cooking for a further 2 minutes to heat chicken through.
While chicken is heating, cook snow peas for about 2 minutes in the microwave.
Add risoni to pan and stir to mix through. .
Remove pan from heat and serve, topped with heated snow peas
