Ingredients

Vegetable Oil

Chicken Fillets
use breast fillets

Red Capsicum
thinly sliced
1
Brown Onion
diced
2
cloves
Garlic
crushed

tbsp
Honey
1
tbsp
Wholegrain Mustard
300
ml
Thickened Cream
100
g
Snow Peas
Coriander
to garnish
Jasmine Rice
to serve
Instructions
Heat 1 tbsp of vegetable oil in a frying pan on high heat.
Add chicken to pan and cook through until browned. Set aside on a plate.
Heat remaining oil in pan and add capsicum, onion and garlic and cooking for approx. 5 minutes until tender.
Add honey and mustard and stir through
Add cream, reduce heat to low, stir and simmer for approx 5 minutes until sauce thickens.
Add chicken back into pan along with snow peas and heat for approx 2-3 minutes
Serve on Jasmine rice and garnish with coriander
