  1. Heat 1 tbsp of vegetable oil in a frying pan on high heat.
  2. Add chicken to pan and cook through until browned. Set aside on a plate.
  3. Heat remaining oil in pan and add capsicum, onion and garlic and cooking for approx. 5 minutes until tender.
  4. Add honey and mustard and stir through
  5. Add cream, reduce heat to low, stir and simmer for approx 5 minutes until sauce thickens.
  6. Add chicken back into pan along with snow peas and heat for approx 2-3 minutes
  7. Serve on Jasmine rice and garnish with coriander
