Ingredients
800
g
Chicken Fillets
use thigh fillets, cut into bite size pieces

tbsp
Olive Oil

Brown Onion
diced

Green Capsicum
diced
Steamed Jasmine Rice
to serve
Marinade
1/3
cup
Soy Sauce
3
tbsp
Honey
3
tsp
Black Pepper
2
tsp
Ground Ginger
Instructions
In a large bowl, add soy sauce, honey, black pepper and ground ginger. Stir to combine.
Add chicken and mix through marinade to coat the chicken pieces.
Place bowl in refrigerator for 30 minutes to marinate.
Heat a wok on medium to high heat and add chicken and marinade.
Cook for 7-10 minutes until chicken is cooked through. Remove chicken and marinade from wok and set aside in a bowl.
Add 2 tbsp olive oil to wok.
Add onion and capsicum and cook for about 3 minutes until onion and capsicum begin to soften. Stir regularly
Add chicken and marinade back into wok and cook a further 2 minutes. Mix through and stir constantly.
Remove from wok and serve with Jasmine Rice.
