Pasta served with a tomato, mince based sauce always provide a welcome dinner in our house. You can serve it with salad or vegetables and get a lovely tasty meal. This dish fits that description perfectly.
The bolognaise style sauce is cooked and simmered to release the flavour. The cannelloni tubes are then filled, covered with a cheesy sauce and topped with mozzarella to be baked to a beautiful golden finish.
This is a great meal to prepare and serve when you are having a family gathering. It looks impressive out of the oven, tastes fantastic and also provides a large serving. You can make it for a smaller family dinner, just be aware that you will have leftover that can easily be put in the freezer to have at another time when you are looking for a quick dinner.

- 750 g Cannelloni
- 1/2 cup Mozarella grated or shredded
- 1/4 cup Olive Oil
- 2 Brown Onions diced
- 4 cloves Garlic crushed
- 2 Carrots coarsely grated
- 2 Celery Sticks thinly sliced
- 1.5 kg Beef Mince
- 800 g Diced Tomatoes 2 cans
- 3/4 cup Tomato Paste
- 4 cups Beef Stock use stock cubes
- 2 tsp Ground Oregano
- 60 g Butter
- 1/3 cup Plain Flour
- 3 cups Milk
- 1 cup Parmesan grated

- Heat olive oil in a large saucepan over medium high heat.
- Add onion, garlic, carrot & celery and cook for a few minutes until onions are soft.
- Add beef mince to saucepan, break up clumps, stir to mix through and continue cooking until mince browns.
- Add diced tomatoes, tomato paste, water & oregano, stir to mix through and bring to boil.
- Reduce heat and simmer, partially covered, for about 1 hour. Stir occasionally.
- Remove from heat and fill cannelloni tubes per instructions below.
- Add butter to a medium saucepan over medium heat and cook until melted.
- Add flour, stir to mix through until fully combined.
- Increase heat and gradually add milk while continuing to stir until sauce boils and thickens.
- Remove from heat, add cheese and stir to mix through.
- Pre-heat a fan forced oven to 160°C (320°F).
- Spoon 1/4 of the filling into the base of a large round baking dish or saucepan. Ideally the dish will be approx 26cm in diameter and approx 11cm deep.
- Press the cannelloni tubes, upright, into the filling. Cover the base of the baking dish.
- Spoon the remainder of the filling into the cannelloni tubes. Spread as evenly as possible.
- Pour the cheese sauce over the cannelloni then sprinkle with mozarella.
- Place in oven and bake for about 40 minutes.
- Remove from oven and serve.
