cut into wedges – use 2 small lemons if you don’t have a large lemon

Instructions
Pre-heat a fan forced oven to 180°C (350°F).
Heat olive oil in an oven proof pan over medium high heat.
Add chicken drumsticks & thighs and cook for about 6-7 minutes until just turning brown.
While chicken is cooking, in a jug add chicken stock, brown sugar, smoked paprika & garlic and stir to mix through.
Place red onion wedges and lemon wedges around the chicken pieces in the pan.
Pour stock mixture evenly over the chicken pieces, then remove from heat.
Sprinkle the chicken with oregano sprigs and chilli.
Place into oven and bake, uncovered, for 25 – 30 minutes until chicken is cooked through.
Remove from oven and serve with long grain rice.
