Ingredients
200
g
Rice Vermicelli Noodles

Peanut Oil

Pork Mince

Sweet Chilli Sauce

Fish Sauce

Mint Leaves

Long Red Chilli
finely sliced
Instructions
Add rice noodles to a large pan of boiling water. Remove from heat and let stand for approx 5 minutes until noodles are tender. Drain and set aside.
Heat 1 tbsp peanut oil in a wok over medium high heat.
Add half of the pork to the wok and cook for approx 3 minutes or until browned. Remove from wok, set aside and keep warm.
Add remaining pork to the wok and repeat process. Add additional peanut oil if required. Remove from heat and keep warm with other pork.
Add another 1 tbsp peanut oil to wok.
Add shallots & lemongrass paste and stir-fry for 1-2 minutes.
Add pork back to wok along with sweet chilli sauce, lime juice & fish sauce. Cook for a further 1-2 minutes until pork is heated through.
Add noodles, mint and coriander to wok and toss to mix through and combine.
Remove from heat and serve.
