  1. Heat oil in saucepan over high heat.
  2. Add garlic, onion and chilli powder. Cook until onion is clear (approx 5 minutes).
  3. Stir in peanut butter, soy sauce, lemon juice and sugar.
  4. Add coconut cream and cook until mixture boils, stirring constantly.
  5. Season with salt to taste and add more sugar if necessary. (makes about 1 1/2 cups)
  6. Serve with Roti

This sauce can be used for a variety of dishes.  It is also great as a satay sauce to accompany chicken kebabs.

You can also make your own roti if you are so inclined.  I typically use store bought roti as, for me, it is usually messy and just not worth the effort.  I do acknowledge that most times, home made roti will be a better outcome.
