This is a very tasty pasta dish that strays from the more traditional cream or tomato sauce based pasta options. Add in chicken which, for me, is always a great mix with pasta and provides a more substantial meal.
This is a great merging of two strong flavours. The basil pesto & butternut pumpkin blend perfectly to complement each other. Mixed through with chicken and spaghetti, or other pasta of your choice, and you have a wonderful quick meal that uses few ingredients but is packed full of flavour.
I tend to prefer other pastas to spaghetti, however for this dish the spaghetti is a great choice to mix through and coat with the basil pesto.
Left overs taste great and can be easily reheated.

- 350 g Spaghetti
- 600 g Butternut Pumpkin peeled and cut into 3cm cubes
- 1 tbsp Olive Oil
- 600 g Chicken Fillets use thigh fillets thinly sliced
- 1 Brown Onion diced
- 200g Basil Pesto

Instructions
- Cook pumpkin for approx 15 minutes in a steamer over a saucepan of boiling water.
- While pumpkin is boiling, cook the spaghetti according to the packet instructions. Drain water and set aside, if necessary.
- While pumpkin is boiling, heat 1 tbsp olive oil is a large frying pan over medium high heat.
- Add chicken to frying pan (in batches if necessary) and cook until browned and almost cooked through. Set aside and keep warm.
- Add onion to pan and cook for about 5 minutes until tender.
- Add chicken and spaghetti to pan and stir to mix through.
- Add pesto and stir to mix through and coat the chicken and spaghetti. Cook for a further 5 minutes until chicken is cooked.
- Add pumpkin, stir to mix through then remove from heat and serve.
