Ingredients
350
g
Penne
1
tbsp
Olive Oil
500
g
Pork Sausages
casings removed and cut/broken into small pieces
200
g
Mushrooms
sliced
3
cloves
Garlic
crushed
1/4
tsp
Ground Paprika
300
ml
Pouring Cream
or light thickened cream
1
cup
Mozzarella
shredded
Continental Parsley
chopped to garnish
Instructions
Cook penne according to packet directions.
Heat olive oil in a large oven proof baking dish over medium high heat.
Add sausage pieces and cook until browned.
Add mushroom, garlic & paprika. Stir to mix through and continue cooking for 3-4 minutes until mushroom is tender.
Add cream, stir to mix through, bring to boil then remove from heat.
Season with salt & pepper.
Pre-heat oven grill on high.
Add penne and 1/2 cup mozzarella. Stir to mix through.
Sprinkle remaining 1/2 cup mozzarella over the top.
Cook under the grill for 2-3 minutes until cheese melts and is golden.
Remove from heat, garnish with parsley and serve.
