Friands are so quick and easy to make and the results are usually fabulous. It’s hard to go wrong making these.
Combining raspberry and white chocolate in a small cake produces a wonderful delight. The slight tartness of the raspberry is offset by the sweetness of the white chocolate. Coming out of the oven the raspberry aroma is beautiful. Dusted with icing sugar they look devine.
There is very little cleanup required after making these. You don’t need a mixer, just a wooden spoon to mix everything through. So if you are short of time and looking for a wonderful sweet treat, these should definitely be on your list.
When I was taking mine out of the friand pan while they were still cooling down, I broke one, so it was only right that I ate there and then. These friands are just devine if you eat them while still warm. The icing sugar may not be needed then, as there won’t be any left to dust!!

Raspberry & White Chocolate Friands

Grease a 12 cup friand baking pan.
Crush 1/2 of the raspberries and place in a bowl with butter, egg whites, almond meal, flour, sugar and white chocolate bits. Mix until well combined.
Fold through remaining whole raspberries.
Pour mixture evenly into the friand pan and bake for 20-25 minutes or until cooked through.
Remove from oven and allow to cool in pan for 10 minutes before turning out onto a wire rack
Dust with icing sugar to serve
