Raspberry Cheesecake Brownies

These brownies look so tempting to eat.  But what is even more incredible is that they taste even better!

The rich brownie base is the perfect start.  Layered over this is a vanilla cheesecake mixture.  This is then topped with more brownie mixture to swirl through the cheesecake.  Finally, raspberries are added and embedded into the cheesecake layer.  Baked in the oven for a beautiful golden finish.

As these brownies are cooking in the oven the beautiful raspberry aroma fills the kitchen.  You just can’t wait for these to be done and ready for tasting.

They can be served warm or cool, however served warm with whipped cream just adds to the richness and decadence.  Equally served with a raspberry sauce is just devine.

  1. Preheat oven to 170° C (fan forced)
  2. Grease and line a 18cm x 32cm (base measurement) baking tray.
  3. Place the chocolate in a bowl over a saucepan of simmering water until melted. Set aside to cool slightly.
  4. In a large bowl add butter and 250g of the caster sugar and beat until pale.
  5. Add 3 eggs, one at a time, beating well after each addition.
  6. With a wooden spoon or spatula, stir the melted chocolate into the mixture until combined.
  7. Fold in the flour and mix through until combined.
  8. Spread 3/4 of the mixture into the lined baking tray. Spread evenly over the tray.
  9. In a separate bowl, beat the cream cheese, remaining 150g of caster sugar, 2 eggs and vanilla essence until smooth.
  10. Spread over the chocolate base in the baking tray.
  11. Dollop the remaining chocolate mixture over the cream cheese layer and use a fork to spread and swirl the chocolate.
  12. Take the raspberries and with a fork, poke them into the top of the mixture. Spread the raspberries evenly over the mixture.
  13. Bake in oven for 40-45 minutes.
  14. Set aside to cool. Remove from tray, cut into squares and serve.
