Mixing chocolate, cream and silky smooth caramel will generally produce a fantastic result. These caramel brownies are no exception and the end result is amazing.
These caramel brownies are wonderfully rich, indulgent and decadent. Start with a thick fudgy brownie base. Top this with a sticky smooth caramel layer. Finish with another thick fudgy brownie layer sprinkled with chocolate chips. The caramel and chocolate layers blend so perfectly with every luscious rich mouthful. Once you start eating, it’s hard to stop.
Serve these brownies with whipped cream and strawberries or perhaps a raspberry sauce to add even further to the sweetness and mixture of flavours.

Ingredients
- 225 g Butter
- 350 g dark chocolate roughly chopped
- 1 1/2 cups White Sugar
- 4 Eggs
- 1 tbsp Vanilla Extract
- 1 1/4 cups Plain Flour sifted
- 1/2 tsp Salt
- 1/4 cup Dark Chocolate Chips

- 400 g Caramel Lollies I use cadbury caramels
- 1/4 cup Thickened Cream

Instructions
- Grease and line with baking paper a baking tray (approx 33cm x 20cm).
- Pre-heat a fan forced oven to 180°C (375°F).
- In a large glass bowl add butter and dark chocolate.
- Melt butter and chocolate in microwave until smooth fully combined and a smooth mix is created. Note: microwave in 40 second intervals at 50% power. Try to avoid 100% power as it is very easy to burn the chocolate. Stir after each interval.
- Add sugar, eggs, plain flour & vanilla extract to the bowl and using a wooden spoon, mix through until fully combined.
- Spread half of the brownie mix into the baking tray. Use a spatula or wooden spoon to evenly spread the mixture.
- Place baking tray in oven and bake for 18 minutes.
- Remove from oven and cool for around 15 minutes before layering the caramel.
Caramel Filling
- In a glass bowl add the caramel lollies and cream.
- Melt caramel and cream in microwave until smooth fully combined and a smooth mix is created. Note: microwave in 30 second intervals at 50% power. Stir after each interval.
- Spread caramel over the brownie layer in the baking tray. Spread as evenly as possible over the brownie layer.
- Spread the remaining brownie mixture over the caramel layer in the baking tray. Note: it will be easier to spread by dropping spoonfuls over the caramel layer and then using a spatula to smooth.
- Sprinkle chocolate chips over the top of the brownie layer.
- Return to oven and bake for 20 minutes.
- Remove from oven and cool fully before slicing. Note: for best results refrigerate when cooled down to allow the brownie to set firmly before slicing.
