Chicken Satay is a very popular dish and a real winner when done at home.
This is an easy to make meal combining a wonderful peanut stay sauce with BBQ chicken skewers. Placed on a bed of salad combining baby spinach, avocado, capsicum, red onion and tomato and you have a great tasting meal to satisfy the whole family.

Ingredients
- 4 Chicken Fillets use breast fillets, cut into chunks for skewers
- 120g Baby Spinach
- 1 Avocado diced
- 2 Roma Tomatoes diced
- 1/2 Red Onion thinly sliced
- 1/2 Red Capsicum diced

Instructions
- In a large bowl, place spinach in first as the base.
- Add tomatoes, avocado, onion and capsicum and toss to combine.
- Spread salad across 4 serving plates.
- Place wooden skewers in water at least 2 hours before you plan to cook the chicken. Note: if metal skewers are to be used you can skip this step.
- Place chicken chunks onto skewers to create the number of chicken skewers required.
- Cook chicken skewers in pan or on BBQ.
- Once chicken is cooked, placed skewers onto salad of each plate.
