The chicken and tortellini are a perfect match. Add into this a creamy spinach and sun-dried tomato sauce and you have a fantastic pasta dish. Finish off by stirring through parmesan cheese and you have a wonderful combination of flavours. This dish will become a family favourite.

- 2 tbsp Vegetable Oil
- 375 g Tortellini
- 2 Chicken Fillets Breast fillets, cut into bite size pieces
- 4 cloves Garlic crushed
- 3 cups Baby Spinach
- 1 cup Sun-Dried Tomatoes use jarred tomatoes packed in oil (approx 280g Jar)
- 1 cup Thickened Cream
- 1/2 cup Parmesan cheese
- 1/2 tsp Salt
- 1/2 tsp Pepper

Instructions
- Cook tortellini according to packet instructions.
- Heat oil in a frying pan over medium heat.
- Add chicken and cook until browned and cooked through (about 10-15 minutes). Transfer to a plate and set aside. Keep warm by covering with foil.
- Add spinach, garlic and sun-dried tomatoes to the frying pan and cook for about 2 minutes or until spinach is wilting. Stir constantly.
- Add thickened cream and cook, while stirring regularly, for about 1 minutes until liquid is reduced a little and becomes creamy.
- Add chicken, tortellini & parmesan to the pan, stir to coat with the cream sauce and cook for about 1 minute until heated through. and cheese melts.
- Top with black pepper and serve.
